


Last week for our road trip to Manzanar, I tried this recipe, Forks Over Knives โNo-Tunaโ Salad Sandwich (made them into wraps using tortillas). Instead of using canned beans, I started with dried chickpeas and cooked them in the pressure cooker using this recipe, Instant Pot Chickpeas by Detoxinista. Both Ben and I really liked this recipe. We’re not on any strict diet, but at home, we’re trying to eat lower on the food chain and mostly pollo-pescatarian, vegetarian, or vegan.
