Healthy-ish Pumpkin Oat Chocolate Chip Cookies

Vegetarian Pumpkin Oat Chocolate Chip Cookies (from ChatGPT)

I like this recipe because everything was already in my pantry.ย 

Makes: ~14โ€“16 cookies 
Texture: Soft centers, lightly crisp edges 

Ingredients 

  • 1 cup rolled oatsย 
  • ยพ cup all-purpose flour (or gluten-free 1:1 flour)ย 
  • ยฝ tsp baking sodaย 
  • ยฝ tsp baking powderย 
  • ยฝ tsp cinnamonย 
  • ยผ tsp nutmeg (optional)ย 
  • ยผ tsp saltย 
  • ยฝ cup pumpkin purรฉe (not pumpkin pie filling)ย 
  • ยฝ cup brown sugar (or coconut sugar)ย 
  • ยผ cup maple syrupย 
  • ยผ cup neutral oil (avocado, melted coconut, or olive oil)ย 
  • 1 tsp vanilla extractย 
  • ยฝ cup dairy-free chocolate chipsย (I used regular chocolate chips)

Instructions 

  1. Heat ovenย to 350ยฐF (175ยฐC). Line a baking sheet with parchment.ย 
  1. Mix dry ingredientsย (oats through salt) in a bowl.ย 
  1. Whiskย wetย ingredientsย (pumpkin, sugar, maple syrup, oil, vanilla) until smooth.ย 
  1. Combineย wet andย dry justย until no dry spotsย remain. Fold in chocolate chips.ย 
  1. Restย doughย 10 minutes (importantโ€”oatsย absorb moisture).ย 
  1. Scoopย 2 Tbsp portions, flatten slightly.ย 
  1. Bakeย 11โ€“14 minutes, until edges areย setย but centers are soft.ย 
  1. Coolย 5 minutes on the pan, then transfer to a rack.ย
