Mango Rollups

A couple of weeks ago Thip showed me how she learned to make mango 🥭 rollups in Thailand, lightly blending, then simmering on the stove for 1-2 hours, then she dries it out in the sun under a net for a few days. But I ended up drying it in the Ninja Foodi dehydrator setting and in the oven. And for the second batch I took another shortcut and didn’t simmer it, just blended and dried it but it’s better if you take the time to do it right. Thip gave me some wise advice: “Time makes food taste good”.

These were the last of the mangoes this season that Ben could pick up from the trees on his bike ride home from work.
