New Recipes Attempted for Thanksgiving 2022

Hope you and your loved ones had a Happy Thanksgiving! This was the first Thanksgiving without any of our kids. They are all on the mainland. We had a fun “Friendsgiving” with our friend Akane and our son Jonah’s schoolmates who graduated from the Coast Guard Academy last year and are now stationed in Hawaii, Greg and Laura. Greg and Laura made and brought over a delicious 😋 stuffing and clam chowder. I spatchcocked, dry brined and charcoal grilled a turkey and cooked up a few appetizers, sides and a dessert.

The spatchcocked, dry brined (links from Weber and Epicurious) and charcoal grilled turkey: It took about 1.5 hours, tried to keep the grill temperature at 350F. Afterwards I made a pressure cooker bone broth from the carcass and bones using this recipe from Umami Girl.com

Mashed Purple (Okinawan) Sweet Potatoes with Pomegranate Molasses – For this recipe, I ended up mixing and matching 3 similar but different recipes.

I pressure cooked the sweet potatoes in an Instant Pot following these instructions at JessicaGavin.com. Then I used the tips in this recipe from Keeping It Relle to make a “rustic” mash (substituted whole milk for heavy cream). I used this recipe from A Mediterranean Gourmet.com to add the spices and pomegranate molasses as well as this advice from Bobby Flay. (Pomegranate Molasses was purchased from Amazon.)

Poke Nachos – majorly cheated by using Foodland’s shoyu poke but otherwise I loosely followed this Keeping It Relle recipe and Chef Dan Swift’s recipe. If you register for next week’s free AARP zoom cooking demo, they will send you the recipe. Following one healthy tip from Chef Dan, I diagonally cut and then placed it on parchment paper, sprayed the wonton wrapper with olive oil, sprinkled with salt, and air fried it 400F x 3-4 minutes.
